Banana Pancakes with Vanilla

    Delicious banana pancakes that are made from scratch then flavoured with a hint of vanilla. Ripe mashed bananas give this tasty breakfast an amazing richness.

    Serves: 6 

    • 1 cup (130g) plain flour
    • 1 tablespoon (20g) white sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1 egg, beaten
    • 1 cup (250ml) milk
    • 1/2 teaspoon vanilla essence
    • 2 tablespoons (40ml) vegetable oil
    • 2 ripe bananas, mashed

    1. Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vanilla, vegetable oil and bananas.
    2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
    3. Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

    These taste fabulous...but make sure you cook them on the lower side of medium cos the extra "bulk"f the bananas means they take a little longer to cook through. But are worth it  -  31 Mar 2009


    I made these in my blender (just remember to ad the wet ingredients first) and they were perfect! I made them with wholemeal flour and used organic maple syrup instead of the sugar My two year old loved them too!  -  10 Aug 2012


    Took shortcuts. I made it all in one bowl and just started off like you would a cake - mixed butter, sugar, eggs, vanilla, together, added mashed bananas then dry ingredients with the milk.  -  21 Dec 2010
