Orange and Poppy Seed Friands

    These dense, moist little almond cakes are the perfect tea time treat to impress family and friends. The orange juice and rind can be replaced with lemon or lime if you prefer.

    Makes: 12 friands

    • 1 tablespoon poppy seeds
    • 2 tablespoons fresh orange juice
    • 6 egg whites
    • 175g butter, melted
    • 1 cup (120g) almond meal
    • 1 1/4 cups (180g) icing sugar
    • 1/2 cup (75g) plain flour
    • 2 teaspoons finely grated orange rind

    1. Preheat oven to 200 degrees C. Grease a 12 x ½-cup (125ml) oval friand pan; stand on a oven tray.
    2. Combine poppy seeds and juice in a small jug; set seeds aside to soak for 10 minutes.
    3. Place egg whites in a large bowl; whisk lightly with a fork until combined. Add melted butter, almond meal, sugar, flour, orange rind and poppy seed mixture; stir until just combined.
    4. Spoon mixture into friand pan; bake in preheated oven for about 20 minutes. Leave friands in pan for 5 minutes before turning out, top-side up, onto a wire rack to cool.
