Raw Vegan Chocolate Cake

    Using dates, coconut, coconut oil, cacao nibs and avocado, this chocolate cake is gluten free, raw, dairy free, egg free, vegan and delicious. Enjoy!

    Serves: 4 

    • Base
    • 100g pitted dates (soaked in hot water for 20 minutes and drained)
    • 100g desiccated coconut
    • 20ml coconut oil
    • Filling
    • 200g raw cacao nibs
    • 100g coconut oil
    • 200g pitted dates (soak in hot water for 20 minutes, drain, reserve liquid)
    • 2 ripe avocados
    • 70g honey
    • 30g raw cacao powder

    1. Place drained dates, coconut and coconut oil into bowl and stir until smooth. Remove and press into cake tin with removable base. Refrigerate.
    2. Filling

    3. Mix cacao, coconut oil and dates. Add avocado, honey and cacao powder. Blend for 30 seconds.
    4. Pour this mixture into the base and refrigerate for a minimum of 3 hours.

    Vegan Substitute

    Some vegans eat honey. If you do not use honey you may sub agave nectar.

    This cake is beautiful. I ground my own coconut and melted the coconut oil a bit and chopped the dates finely before soaking. I also tasted and decided not to add honey as it was quite sweet because of the dates. Love the texture and flavour of the avocado.  -  10 Jul 2014
